4. Seafood Chowder

This is really the most decadant recipe in my portfolio at the moment.  All fits in perfectly with my nutrition plan – I love, love, love my plan – Thank you Martin for the most amazing plan….

 

Ingredients
 
  • 160g Fresh peeled king prawns
  • 160g Fresh scallops
  • 200g Fresh mussels
  • 200g Fresh Cod fillet
  • 6 medium stalks Celery
  • 100g Onion
  • 25g Butter salted
  • 200ml Fresh unhomogenized milk
  • 300g Double cream
  • Seasoning to taste

(is that a decadent list of ingredients or what?)

Method

  1. Finely dice the celery and onions
  2. Soften in 10g butter  together with 2 cloves of garlic
  3. Add seasoning to taste – salt & pepper ( I added fennel seeds too)
  4. Chop all fish
  5. Lightly fry in the remaining butter
  6. Combine both sets of ingredients
  7. Add 2 tbsp of fish sauce
  8. Add 200ml of whole milk
  9. Add 300g of fresh double cream
  10. Simmer for 10 mins
  11. Eat with crusty bread or just on its own.

Serves 6 x 275 gram portions.
